Prepare the winter melon.

Wash the winter melon, remove the flesh, and cut off the thick skin with a knife.

Cut the winter melon into strips. Because pure juice is used for pickling later, it is not recommended to pickle too many winter melons at one time. This time I made more than half a normal household safety glass bowl.

Heat hot water in a pot, bring to a boil, and blanch the winter melon for 3-5 minutes. The winter melon will change color slightly and is almost ripe.

Add ice cubes to the basin and let it cool down. After the winter melon strips have cooled down, pour out the water.

Control the moisture of the dry winter melon strips. Pay attention to the drier the better. If the winter melon is watery, it will dilute the orange juice and affect the taste.

To squeeze oranges and lemons, I use the simplest type of juicer. I squeeze the juice with my hands. After the juice is extracted, add 30-50g of sugar and mix well. Add 2-3g of salt and mix well.

Stir for a while to ensure that the sugar and salt are fully dissolved.

Soak the dried winter melon strips in orange and lemon juice. Make sure that the orange juice completely covers the winter melon strips, so that the marinated taste is delicious.

Cut a small slice of lemon on top, cover with a lid, and refrigerate for 24 hours.
