Honey Yuzu Tea Sauce
Overview
I wanted to eat oranges a few days ago, but my husband misunderstood and bought a big grapefruit. Unfortunately, I have severe tooth sensitivity and I really can’t eat it. So, I cooked it~~

Steps
-
Prepare materials. It is best to buy grapefruits that are large, pointed, and heavy to hold. Rock candy: buy rock candy (the ones with cotton threads strung in the middle)
-
I think the grapefruit peel has wax. So I'll soak it in hot water for a while. Because I need to use grapefruit peel later. It's better to be clean and free of impurities.
-
After ten minutes, take it out, rub the surface with salt and rinse it off.
-
This is how I peel it. It's easier to peel off if you mark it this way.
-
After peeling it off
-
Slice off the white part of the grapefruit peel. It is not easy for novices to master, so it is recommended to peel off part of the white color first
-
When it's about this thick, start slicing again. The knife moves up and down slowly. Because if the knife is sharp, the hand will usually not feel any pain when it is cut. It's better to be careful. Take your time. This is a big project. More laborious.
-
The semi-finished product needs to be chopped again.
-
Thickness looks like this. It's easier to cut as long as you press it firmly.
-
Cut into thin strips, the finer the better. Soak in salt water for half an hour.
-
Cut the lemon and cut off the protruding and white parts at the front and back. Because it’s bitter~
-
You also need to remove the core and the white dot in the middle, dig it out ^_^
-
Cut lemon slices and marinate with thick sugar
-
Start peeling the grapefruit flesh. Remove the core and fascia and break into pieces, not too small as they will fall apart when cooked.
-
Like shredding, this is a big job. Just look at the skin in the basket next to it. It took me half an hour to peel it off. -_-#
-
Start cooking, first put two pillars of rock sugar and boil, then add 2/3 of the grapefruit peel and cook for about ten minutes until it looks transparent. Add another 2/3 of the grapefruit meat. Turn the heat to medium heat.
-
Someone will ask where the other third is. It was here that I cooked the other third in a casserole, please follow the steps above. ^_^
-
Turn the fire to medium heat. About half an hour later, the color turns yellow. This is the effect of rock sugar. Then continue to boil. Stir occasionally.
-
It took another 6 episodes for Spongebob to reach this point. Put the lemon in it. OK. Collect the juice. Turn off the heat.
-
When bottling, lemons are placed at the bottom. I don’t like lemon peel when making grapefruit tea. Too strong. But I like the lemon flavor.
-
Two-thirds of the grapefruit fills the 750ml bottle. I specially stood that lemon up ^_^
-
While waiting for the filled yuzu sauce to cool down, the yuzu sauce in the casserole was ready and I didn’t add lemon. It took 25 minutes longer than the filled bottle. There is almost no moisture left.
-
When picked up by the chopsticks, it becomes stringy.
-
Look at the color^_^ What a beautiful caramel honey color.
-
See how high the one on the right can be stacked.
-
After cooling, add three spoons of honey
-
Divide the large bottle into two bottles and add three tablespoons of honey each. Put it in the refrigerator and drink it for a long time. It won't break.
-
This is the color that comes out of the casserole. Not only is it darker in color than the larger bottle, it also has a richer flavor.
-
Because there is honey. So it’s best not to make hot water like those sold outside. Water that is too hot will destroy the nutrients in honey. It is best to rinse it with water at 60 degrees.
