Boiled Bitter Melon with Bayberry

I learned it from a friend in Chaoshan. But I didn’t weigh the portion carefully. There are slightly more bayberry than bitter melon. Look at the picture!

This is the raw material ~ there are still a few rock candies not included

Scoop out the seeds from bitter melon and cut into pieces about the same size as bayberry

Put all the bayberry, bitter gourd and rock sugar into a non-stick pan, add no water, and cook over low heat. During this period, stir it occasionally. (Originally, it was boiled over high heat and then changed to low heat. Since my portion was small, I just boiled it over low heat and slowly)

This is what it looks like after cooking. The longer it takes, the more it will gel up a bit. There is no strange smell as expected, the taste is sweet and sour, and the bitter melon becomes easier to eat! It’s more delicious when chilled and eaten as a snack~
