Prepare the ingredients.

Add star anise, dried red pepper and 2 tablespoons of salt to the peanuts and soak them in boiling water for 3 hours.

Then, peel off the skin of the peanuts, drain and blow dry.

Add peanuts and star anise dried red pepper to cold oil in a cold pot and fry together. Fry slowly over medium-low heat, stirring constantly. Taste when it is slightly brown to avoid over-frying. (I dare not take pictures for fear of over-frying)

Drain the oil from the fried peanuts and put them in a large container to cool. (I forgot to take a photo of this step)
