Overview
Hawthorn, also known as mountain red, strengthens the spleen, stimulates the appetite and eliminates food, strengthens the heart, lowers blood lipids and blood pressure. The heat of adding sugar to stir-fry red fruits is very important, not only to prevent the fruits from rotting, but also to make the soup sticky, so the time of adding sugar for the first time must be controlled well. If the sugar is added too early, it will not be easy to cook the sour fruits until they are soft and rotten.

Prepare the raw materials and clean the hawthorns

Use a knife to make a circle around the hawthorn (you can feel that the blade of the knife can touch the hawthorn seeds) and twist it gently with your hands. The hawthorn will be divided into two halves. Use the tip of the knife to gently dig out the seeds.

Put the processed hawthorn into a pot (an iron pot cannot be used) and add water to cover the hawthorn.

Bring to a boil over high heat. When the hawthorns are about to crack, add 2/3 of the rock sugar (the moment the high heat boils, the hawthorns will also crack, so be sure to control the time). Reduce the heat to medium-low and continue cooking for about 10 minutes.

Add the remaining rock sugar and cook for about 5 minutes.
