Steps
-
Choose hard yellow peaches, wash and peel them
-
Scoop out the peach core from both halves and cut into small pieces. After processing all 8 peaches, weigh them to 1,200 grams.
-
Add rock sugar, the rock sugar can be increased or decreased according to your own taste. I added 200 grams of rock sugar to 1200 grams of peach meat, and the finished product is sweeter.
-
Boil water in a steamer, put the yellow peaches in after steaming, cover the pot and steam for about 25 minutes without adding water. Adjust the time depending on the softness and hardness of the yellow peaches. If the yellow peaches you buy are too soft, steam for a while. You can open the pot lid to observe during the steaming. When steaming, turn the rock sugar under the yellow peaches to make it easier to melt.
-
After steaming, the yellow peaches come out of the water on their own, giving them their original flavor, unlike those that are boiled in water.
-
The freshly steamed yellow peaches are not very tasty because the rock sugar juice and the yellow peaches have not yet merged into one. Let them dry and then put them in a sealed jar and refrigerate them. The taste will be better after refrigeration. The sealed jars can be scalded with hot water to sterilize them in advance. The canned yellow peaches can be stored for a longer time.
