  1. Separate the raw cold noodles (ordinary cold noodles are enough, no special noodles for grilled cold noodles are needed) and wash them one by one. (In fact, it is easier to separate the cold noodles by kneading them in water, but I like to separate them first and then wash them to ensure that the roots are absolutely clear. More importantly, the noodles may absorb too much water, so avoid soaking them in water for a long time.) Slightly scald them in boiling water and take them out immediately.

  2. Mix the blanched cold noodles with oil and stir-fry them in a pan. Add sugar, barbecue seasoning, and chili powder (optional). Cook the vinegar before turning off the heat (most people like to add vinegar, but if you don't like it, just don't add it). After turning off the heat, add salt, MSG or chicken essence.

  3. PS. You should have a rough idea of how deep to stir-fry the noodles and how much to add each seasoning when buying grilled cold noodles. (I personally don’t add eggs when eating grilled cold noodles, shredded potato pancakes, etc., because eggs have a strong taste and will overwhelm the meal.)
