Ingredients
Steps
-
A piece of pork suet, rinse it repeatedly with running water
-
Cut into small pieces about 1.5 cm square
-
Put the lard into the pot and add a small bowl of water, enough to soak about half of the lard
-
Bring to a boil over high heat, using a spatula to stir the suet frequently to prevent it from sticking to the pan and to allow the suet to heat evenly
-
After the water boils, turn to low heat and simmer slowly. The oil will be as white as jade.
-
Keep the fire uncovered throughout the process, and don’t worry about moisture, as the excess moisture will evaporate
-
When the lard becomes dregs and no longer produces oil, turn off the heat, drain the lard residue, sprinkle some salt on the lard residue and eat it directly, or stir-fry vegetables or peppers.
-
When the oil temperature is not too high, pour it into a container and refrigerate until it solidifies
-
Lard is indispensable in Chinese puff pastries. Just boil a can of it and keep it for later use. Occasionally, vegetables fried in lard are especially fragrant
