After you buy it, wash it and let it dry. You can dry the water on the surface under the sun, or you can put it through a strainer to drain it naturally. If it is not soaked in water, it can be stored for a longer period of time, and it will remain crisp, not frosty, and not easy to deteriorate.

Remember to wash and drain the chopping board for cutting the peppers in advance.... In order to keep it all hand-made, I chose to cut it by hand instead of using a blender. I cut it first with a diagonal knife to make it easier to chop in the next step....

Chop the chopped peppers in the same way as meat and set aside.... Chop them in three parts to ensure that they are almost the same size and reduce waste.

After chopping, put it in a basin, pour in the glutinous rice wine steamed in the countryside, sprinkle with 3 teaspoons of salt and mix well (if there is no glutinous rice wine, you can use strong white wine or red wine instead, if it is white wine, just reduce the amount by 1 teaspoon, and the same 3 teaspoons for red wine)

The picture shows the semi-finished product that is mixed well, then put into a glass jar, sealed and left to rest for a week. After the flavor is absorbed, the aroma comes out and it can be eaten.
