Thread noodles are a traditional snack in Fuzhou City, Fujian Province. They belong to the Fujian cuisine. The main production area is in the Shiyi area of Fuzhou. Thread noodles are the longest and thinnest noodles in China. They are famous for being as thin as hair, soft and tough, and not mushy when put into soup. Because thread noodles are the longest noodles among the noodles, they are also called long noodles and longevity noodles. Since the words "long noodles" and "long life" in Fuzhou are homophonic, the people in Fuzhou also call it "long life". Such thin noodles are tied into small bundles like silk threads, which are called fingers in Fuzhou dialect. One finger is enough for a bowl of noodles. When relatives and friends travel far away, send them a finger of thread noodles and two duck eggs as a kind wish and prayer. The so-called duck egg, which is homophonic to "press the waves", makes the journey across the ocean smooth and safe. Eat duck eggs and talk about peace, that's how it comes about. A bowl of longevity noodles like this is also served on birthdays, usually with chicken soup, and is called Tai Ping noodles.
