This year my family has a bumper harvest of mustard greens and cabbage. They are sun-dried and pickled, batch after batch. I have never been to the fields, so I don’t know how many they have planted. If we don’t work hard to eat the amount we have harvested, it might go bad. Salted mustard greens are mustard greens that have been dried, kneaded with salt, and left for a few days to soften and acquire the flavor. Then they are taken out to dry for a while, making them not sour, salty, and crispy.
