This year I saw some good Nanwan fish fillets sold in the supermarket, so I bought a few pieces. Nanwan fish is a specialty of Nanwan Reservoir in Xinyang, Henan Province. This fish has delicious meat and is very popular here. I picked a few pieces of thick meat and prepared to make a crispy and tender fish salad.
