Kumquat jam
Overview
This is what everyone in my hometown makes. My dad and I are the only ones who like spicy food, so this one is very suitable for us. You can make the sauce when eating hot pot, and you can put a few pieces on the noodles and mix with it when eating noodle soup. It tastes very good!

Prepare kumquats (sour kumquats, not sweet ones), chili peppers, salt, clean bottles and other materials.

Cut the kumquats in half in the middle (make sure all the kumquat flesh is cut so that the juice can flow out, you can cut it into smaller pieces if you want), cut the peppers into sections

First sprinkle a little salt on the bottom of the bottle, add a layer of kumquats, a little pepper, and then sprinkle a little salt (I put a little pepper in when I made it, but I think it tastes better without it)

Just put a bottle full of them layer by layer, and then pour a small amount of white vinegar and white wine (you don’t have to put the white vinegar and white wine, they can be stored longer)
