Pickled Quail Eggs
Overview
This is something I came up with on a whim. I have only eaten salted duck eggs and salted eggs. But there were too many egg whites, and I would feel full if I ate the whole egg, so I wondered if I could eat pickled quail eggs. I went to the supermarket several times to look for it, but there were only Songhua quail eggs, not salted quail eggs. Well then do it yourself.

Quail eggs can be washed, but they must be dried after washing otherwise they will break easily. I didn’t wash them because I was afraid they would break. Soak the raw quail eggs in high-strength white wine (I rubbed them as if they had been washed with wine), wrap them in salt, seal them in a bag, and put them in a cool place.

After marinating for a week, the eggs will come out of the water on their own, and they are almost ready. If you are impatient, you can take out two and steam them to try.

The oil is out, and the egg yolk has a scratchy texture, which is delicious.
