Sun-dried eggplant
Overview
The sun-dried eggplant can be mixed into bean paste and marinated, or it can be sealed in a plastic bag. When you want to eat it, soak it until soft, stir-fry or steam the meat.

Clean ten pounds of fresh eggplants,

Cut the meat in half and make two cuts on each piece, as shown in the picture.

Hang the cut eggplants in the sun or a ventilated place to dry.
