Bowl cake
Overview
In the past, when I was in my hometown, when summer came, my mother would steam bowl cakes with her friends, which could last for a month. Sometimes she would get up in the middle of the night to steam them. Although she was tired, she was very happy talking and laughing with her friends. But after we came to the United States, many of the ingredients were different. We tried several methods and finally steamed the bowl cake with the most local flavor!

Pour half a bag of rice flour into a small bucket (any kind of container. Just don’t be too small). Use hot boiling water to dissolve sugar cubes into sugar water, then pour the sugar water into the rice flour and mix evenly, not too thin or too thick, then add yeast and wrap it up for fermentation. The rice milk will ferment and become high in about 4 hours. You will find a lot of small bubbles on the rice milk. Stir once with chopsticks to ferment. It will become high again in about 4 hours. Stir again with chopsticks to ferment. It will be ready in about 4 hours.

This is the first round. If you steam it immediately, the steamed bowl cake will be hard, salty and inedible. So I will pour out the prepared rice milk and leave half a bowl, add rice flour again, and ferment it three times like the first step. Then pour out the remaining half bowl and add rice flour again and ferment three times. Then pour out the remaining half bowl and add rice flour again and ferment three times. This is the final rice milk. When preparing to steam, add some alkaline water to make the steamed bowl cake less sour. And the bowl cake will not stick to your hands. Add the appropriate amount of sugar cubes (because I didn't add a lot of sugar cubes at the beginning). Everything is ready

Scoop the rice milk into a small cup

Sprinkle with black sesame seeds and butterfly slices (a large pink piece, cut into pieces yourself)

Place in a pan and steam for about 15 minutes
