Place the whole pork belly in a pot under cold water until the water boils, remove and wash into small pieces of 2×2cm. Prepare other seasonings

Pour oil into the wok, add rock sugar directly, and stir-fry over low heat until the sugar turns brown.

If you want a darker color, fry the sugar a little darker.

Add the blanched pork belly and stir-fry over high heat until the meat is fully coloured.

Pour cold water to cover the pork, add garlic ginger cooking wine, bring to a boil over high heat, then reduce to low heat and simmer for 40 minutes to 1 hour. If it is pork belly with skin, it needs to be simmered for more than an hour and a half. Use chopsticks to prick it lightly and use high heat to reduce the juice.

While the meat is stewing, break off small florets of broccoli and soak them in salt water for ten minutes. Remove them from boiling water and blanch them for 2 minutes. Remove and serve on a plate
