Sift the almond flour and powdered sugar ~ it is best to sift 2-3 times, the surface of the macaron will be smoother

Next, separate the egg whites and egg yolks. We only use egg whites today, so seal these egg yolks and store them in the refrigerator or freezer to start whipping the egg whites. As for the sugar, we need to pour it into the egg whites in 3 batches. Stir each time for 1 minute and then continue to pour in the remaining sugar. Finally, when the egg whites are about to whip, add a little food coloring and continue whipping them until they become stiff peaks like this

Start mixing the sifted powder and egg white evenly. First put 1/3 of the egg white into the powder. After mixing evenly, pour in all the remaining egg white. Stir gently until even. This can reduce defoaming during mixing with almond flour

Put all the remaining egg whites in, and be careful to stir gently from the bottom up

The macaron batter has been made, put it into a piping bag, and then squeeze it vertically to the baking pan into a small round shape. If you have a special mat for macarons, you can squeeze it directly into it. At this time, be careful not to squeeze it too full. It should be about 4/5 full~~

Shake the table twice and let it dry for 15 minutes. At this time, start preheating the oven to 150 degrees, put the dried macarons into the middle rack of the oven and bake for 13-15 minutes

Prepare some ice cream, a small bowl of hot water and a small round mold. As for ice cream, juju has prepared homemade vanilla, chocolate and green tea flavored ice cream today. You can use purchased ice cream or homemade ice cream like me. Put the mold into the hot water and then quickly insert it into the ice cream. This way you can cut off the small round ice cream. If you don’t have a round mold, you can use a small cup to print circles on it and then cut it out with a spoon or knife
