Chicken and Eggplant
Overview
Jiha Eggplant, Jiha is a dialect, and it vividly refers to the way a chicken looks when pecking. Use a spatula to fry the whole eggplant while cutting it, like a chicken pecking, until it becomes puree. This dish is salty and fragrant, making it a great side dish.

Wash the eggplant, remove the stem and steam it. Long eggplants can be cut in half crosswise.

Crush a small piece of ginger, mince the garlic, and prepare an appropriate amount of peppercorns

Heat oil in pan. Be sure not to add too much oil. Eggplant absorbs oil very much. If there is too much oil, it will grow squeaky

Heat the oil until it is 70% to 80% hot. Add in the old ginger and Sichuan peppercorns

Put the steamed eggplant into the pot

Use a spatula to quickly cut and press, add green peppers and stir-fry

After the green peppers are cooked, add appropriate amount of salt and chopped garlic, stir-fry evenly and turn off the heat
