Wash the winter melon including the seeds and cut into fine cubes.

Crush rock sugar and brown sugar.

Add brown sugar to the winter melon and marinate for about half an hour.

After pickling, the winter melon will naturally release water; add rock sugar and start making winter melon tea (no need to add additional water).

I used an electric pot to control the time to two hours, stirring constantly during this period to prevent the sugar from burning; cook until the winter melon flesh becomes transparent.

Use a filter or gauze to separate the residue.

Strain again slightly.

Put the filtered winter melon syrup into a clean sealed bottle and store it in the refrigerator. (It’s best to drink it within a week)

The remaining wax gourd residue can be mixed with hot water or boiled with water for drinking.
