Spicy stir-fried chicken wings
Overview
We Hunanese like to eat spicy food. This dish is very simple, but it is Hunanese’s favorite side dish: it not only contains chili, but also uses more minced ginger and garlic to enhance the flavor.

Chop chicken wing roots into small pieces

Run it under the tap for ten minutes to remove the bloody water

Add light soy sauce and cooking wine and marinate for half an hour to add flavor

Take out and drain, use kitchen towel to absorb the water, put it into a hot oil pan and fry until the surface is golden brown. Remove and control the oil
