Overview

  1. Put the egg yolks into a large bowl that is oil-free and water-free, and add salt and sugar.

  4. Beat until thick, add 1 tablespoon of oil and beat again. Repeat this process until the sauce is so thick that it is almost impossible to beat, as shown in the picture.

  5. Add 1 tablespoon of lemon juice to dilute it, and then repeat the action of "beating → adding oil → beating → adding lemon juice if it cannot beat" until the oil is used up. The lemon juice does not have to be used up.
