Chestnut Braised Pork

This season is the time to eat chestnuts. Chestnuts are delicious but troublesome to peel, but for the sake of eating, it doesn’t matter

Wash and cut the pork into pieces, separate the fat and lean ones

Peel the chestnuts, wash them and set aside. Large ones can be cut into pieces

Heat the pot, add the base oil, put the aniseed and garlic into the pot and fry

Put the fat into the pot and stir-fry until the fat is released

Add the lean meat and continue to stir-fry. Stir-fry the lean meat until it is slightly yellow, then pour in rice wine to remove the fishy smell, stir-fry twice over high heat, add soy sauce, and stir-fry until evenly colored

Pour in the chestnuts, continue to stir-fry, add an appropriate amount of water and bring to a boil over high heat, then simmer over medium-low heat for 3 minutes

Reduce the juice over high heat (not too dry), add salt to taste, and remove from the pan
