Pork belly stewed with isinglass and lotus seeds...
Overview
Isinglass was bought from an acquaintance of my mother in my hometown of Zhanjiang! It’s pretty good looking! Never had time to stew! Taking advantage of the long vacation! Stew!

Let’s take a group photo with the main ingredients!
-
Soak the isinglass in advance! Personally, I feel that there is no such thing as absolutely clean stuff! It is safest to wash with bubbles. Compared with nutrition, I personally think hygiene is the most important! ! (Look at the water after soaking, there is a lot of residue)
-
Here comes the most labor-intensive process... wash it over and over again, wash it with powder (as long as it is sticky, whether it is flour, starch, or alkali powder! It’s up to you to choose), rub it with salt a few times, and all the mucus will come out! Be rough with it! Only then can it be washed cleanly!
-
Then put it in the water and scald it! Did you see foam when you ironed it? That’s all fat! None!
-
Cut off all the stomach membranes on the pork belly! So as not to affect the taste!
-
Check inside and out, and remove some yellow fat and white stuff (it just falls off when you pick it with your fingers, just like dead skin). I think these things will affect the taste of the soup! Then rinse the pork belly, squeezing it inside and out while rinsing! It can also wash out a lot of mucus! Wash the pork belly until it is squeezed in water and the water is no longer dirty!
-
Add enough water to the pot, add the pork belly and cut into pieces of fish maw! Add another large piece of ginger (beat it into pieces)! Stuff some white pepper into the pork belly! Drizzle some wine to get rid of the smell! Bring to a boil over high heat and simmer for 3 hours!
-
Core the lotus seeds! Put it in the pot and cook it with the pork belly! If you like it rotten, add it earlier; if you don’t like it, add the lotus seeds when it’s half stewed!
-
When simmering for about an hour and a half, remove the pork belly and cut it into slices (or slices)! Then put it in the pot and continue to stew! Do not turn off the fire during this process!
-
Just add salt before serving... Smecta...
