Chop the duck meat into pieces, blanch it with water and a little ginger, dry it and set aside

Peel the potatoes, chop into pieces and set aside

Add oil to the pot, add ginger and garlic and sauté until fragrant, add bean paste and stir-fry until fragrant (note that the bean paste must be made with young beans.)

Add duck meat and stir-fry until the duck skin is slightly brown

Pour in water, the water should cover the duck meat, cover and cook over medium heat for 20 minutes
