Bacon, Corn and Snow Pea Salad

Overview

A super simple quick dish that goes great with bread or toast. If you like, you can add some ham slices or mashed potatoes. The amount of sauce can be adjusted according to personal taste. Garnishing with some black olives or pickles is also a good choice.

  1. Blanch the snow peas and corn, let cool, then place on a plate and set aside. Add a few drops of oil to the pot when blanching to prevent vegetables from discoloring.

  2. Add a spoon each of mayonnaise and Thousand Island dressing, add an egg yolk, and an appropriate amount of cracked black pepper and mix well.

  3. Pour the sauce over the corn and snow peas, sprinkle in an appropriate amount of bacon and chopped parsley and mix well
