The sea bamboo shoots bought in the market can also be called sea bamboo. The meat is very chewy and crispy. It can be fried directly or served cold. It is very delicious.

There are four sea bamboo shoots. Sea bamboo shoots are a kind of marine organism, similar to geoducks. I don’t know if they are the same species as geoducks, and I can’t find any relevant information online.

Prepare ingredients. Cut celery into sections, cut sea bamboo shoots into strips, mince garlic and ginger.

Boil some water in a pot. After the water boils, blanch the sea bamboo shoots for 10 seconds.

Drain into cold water, or ice water, to make the sea bamboo shoots crispier.

After cooling, remove and drain, then place on a plate and set aside.

Heat oil in a pan, add ginger and garlic and sauté until fragrant.

Add the celery and stir-fry evenly.

Add a small amount of water and stir-fry until the celery is broken.

Pour in the sea bamboo shoots and add a spoonful of cooking wine.

Pour half a spoonful of light soy sauce and stir-fry a few times. Add a spoonful of salt and half a spoonful of chicken essence to taste, stir-fry evenly and serve.
