Mushroom and Vegetable Fried Rice
Overview
This is fried rice made with leftover rice. It is a method that my mother often used to deal with leftover rice when I was a child. However, the vegetables used are different. I only remember that when I was a child, what I often ate was Chinese cabbage stewed with vermicelli. Then the leftover rice was stirred in and a beautiful meal was completed. Even now, I still love eating this bite. However, what has changed is that it can be paired with more different side dishes.

Prepare the mushrooms and clean them.

Blanch several types of mushrooms, drain and set aside.

Wash the snow peas, remove the heads and tails, and cut into sections with a diagonal knife.

Slice the bacon, add a little oil, fry the bacon until cooked and take it out.

Add a little olive oil to the pot, fry the snow peas until they are raw, add the mushrooms, sprinkle with appropriate amount of salt, and stir-fry.

Finally add bacon and stir well.

Scoop out some of the extra vegetables, pour the white rice into the pot,

Just stir-fry it with the vegetables.
