Cut the pig fat into cubes. I used the fat from the local pork belly, because the fat is too thick and boiled with some lard. You can also use pork suet!

Slowly 🐷 the fat begins to shrink. Wait until it turns yellow. Don’t make it too dry. Don’t use too much heat, otherwise the color will not be that white. Don’t wait until it is too dry. Just turn off the heat, filter, add some salt and put it in a clean container. If you want to make desserts, you can add no salt or add a little bit. The reason for adding salt is to keep it longer
