Vegetable tofu
Overview
When I saw someone selling green bean cubes in the market, I remembered the vegetable tofu from my hometown, so I bought it and tried making it. It really tasted like home.

Slice 5 grams of green onions, shred 4 grams of ginger, and shred 3 dried chili peppers.

Wash the leafy vegetables, blanch them, and then wash them with cold water. If the stems are thick, split them into thin slices.

Wash the green beans and mash them with a garlic mortar.

Put oil in the pot, heat it up, add onion, ginger, and chili and stir-fry until fragrant, then pour in the mashed beans, stir-fry, and add a large bowl of water.

After cooking for ten minutes, add chopped leafy vegetables, salt and chicken essence. Stir fry for one minute and turn off the heat.
