Wash the hairtail and cut it into sections. Heat oil in a pan, add ginger slices and sauté until fragrant, then add the hairtail and fry.

Fry the hairtail until golden brown on both sides, put it on a plate, and pour off the remaining oil in the pan (this can reduce the amount of oil intake and is good for health).

Pour the hairtail on the plate into the pot, add cooking wine, soy sauce, salt, sugar and an appropriate amount of water. Bring to a boil over high heat and reduce to low heat.

After about ten minutes, reduce the juice over high heat, sprinkle with chopped green onions, take out of the pan and put on a plate.
