Braised Pork Ribs with Potatoes
Overview
I made braised pork ribs a few days ago and I still have some leftover. Today I added potatoes and made this quick dish, which is great for rice!

One portion of cooked ribs (see my recipe for the detailed process).

One potato, peeled, washed and cut into slices, soaked in water.

Minced ginger and set aside.

Heat oil in a pot, add chopped green onion and ginger to the pot, add potato slices and stir-fry evenly.

Add an appropriate amount of light soy sauce to color, add a little salt to taste, then pour in the ribs, add an appropriate amount of water and bring to a boil, wait until the soup thickens and the potatoes become soft (this step is missing a picture, so you can ignore it).

Remove from pan and plate.

Eat it quickly!
