Grilled eggplant with tomato sauce
Overview
This is a grilled eggplant made according to Teacher Jun's recipe. It is my first time to try grilling it. It is fragrant with onion and garlic, rich in tomato juice flavor, and has a fresh and tender texture. It feels a bit like Western food. It is so delicious. Eat eggplant regularly to fight aging! If you don't like eggplant, you can try it.

Prepare all materials

Wash the eggplant and cut into thin round slices

Chop onions

Garlic minced

Take a baking sheet, I use a plexiglass lunch box, and add eggplant slices

Take a small bowl, pour tomato sauce, add chopped onion, minced garlic, salt, white pepper, olive oil and mix well

Spread the seasoning evenly on the eggplant slices

Preheat the oven to 220 degrees and bake on the middle rack for 25 to 30 minutes
