Cut the tofu into cubes and soak in salt water.

Wash the fish head and cut into slices of ginger and set aside.

Put oil in the pot, add ginger, stir-fry, add fish head and fry for three to five minutes, turning back and forth. Put two spoons of cooking wine.

Boil water, hot water. It's better to put more. Bring the pot to a boil and add the tofu.

Cook for five to ten minutes, then turn to medium heat. Just cook until the soup is almost done. If it feels bland, add a little salt. I ate lightly so I thought it was just right.
