Overview
Baguette is the most traditional French bread and is rich in nutrients. The representative of French bread is baguette. The original meaning of baguette is a long gem. The recipe of French baguette is very simple, using only four basic ingredients: flour, water, salt and yeast. Usually no sugar, no milk powder, no or almost no oil is added. The wheat flour is unbleached and contains no preservatives. The oven at home is not big enough, so I made mini baguettes!

Make liquid seed: Add yeast to warm water, mix well, and add to flour

Stir well, seal and refrigerate for 18-24 hours

Put the main dough ingredients and 44 grams of liquid into the bread bucket, and knead the dough for about 35 minutes. The temperature of the dough after mixing is about 25 degrees

Put the dough into a container and leave it in a warm place to ferment for 90 minutes. After fermentation for 45 minutes, fold it and continue to ferment

During this step, the oven begins to preheat to 250 degrees. Divide the fermented dough into 2 parts and rest for 15 minutes

Turn the smooth side of the dough down, turn the lower third up and press it tightly

Press the upper third down

Roll the dough into a long shape to match the slate

Place the shaped baguette dough into the mold and ferment for 30 minutes

Sprinkle the fermented baguette dough with rye flour and cut into pieces with a razor blade

Move the dough to the stone board, quickly add hot water to the upper baking sheet, close the oven and bake for 10 minutes until the edges are completely popped. Remove the upper baking sheet and continue baking for about 10 minutes until the color is satisfied
