Autumn is coming, and Xuelihong is on the market. Every year at this time, I pickle a lot of Xuelihong and give it to relatives and friends. Xuelihong has high nutritional value: it can refresh the brain, detoxify and reduce swelling, appetizer and digestion, improve eyesight and relieve diaphragm, lose weight, lead excretion function, anti-cancer function. It contains protein, fat, sugar, ash, calcium, phosphorus and iron, carotene, thiamine, riboflavin, niacin, vitamin C, etc.

Place the purchased Xuelihong in a cool place to dry for a day or two. Prepare various materials

Take part of the potherb, salt and pepper and a little alkali and put them into a basin.

Use both hands to rub the water out of Xuelihong. Be sure to rub it evenly.

Put a heavy object on top. But don’t cover it tightly. It will generate heat during the marinating process. I couldn’t find a stone so I had to put a heavy object on the casserole.

It should be stirred once every second, third and fourth day after marinating to remove the mustard smell. It can be eaten after seven days.
