Tofu fish in sour soup
Overview
I bought a fat-headed fish today, and the fish head was made into minced pepper fish head. What should I do with the fish body? I happened to buy soft tofu today, and I also have ready-made pickled cabbage at home, so let’s make a soup!

Steps
-
The sauerkraut is home-pickled old sauerkraut. Wash it and cut it for later use. The red pepper, ginger and garlic are also cut well.
-
Cut the fathead fish body into pieces, mix well with cooking wine, light soy sauce, salt and ginger and marinate for 15 minutes
-
Silky tofu cut into cubes
-
Fatty meat slices
-
The pan squeezes out the fat from the meat. Lard is the key to the plumpness of the fish
-
That's almost it. Clip out the oil residue
-
Fry the fish skin side first until the fish skin becomes crispy
-
Turn over and fry until both sides are golden brown, then remove from the pan and set aside
-
Heat oil in a wok and sauté ginger and garlic until fragrant
-
Pour in sauerkraut and stir-fry
-
Stir-fry the sauerkraut until fragrant and add enough boiling water
-
Stew the soft tofu in a pot
-
After boiling, add the fried fish and cook together
-
Bring to a boil over high heat, simmer over low heat for 20 minutes and then remove from the pot. Because the fish has been marinated in advance, there is no need to add any seasoning.
-
Overflowing with sour aroma!
-
The fish is crispy and the soup is sour and spicy!
