Simple and healthy pumpkin glutinous rice cake

Wash the red beans and mash them in a pressure cooker.

Add sugar and mix well to make red bean paste filling, set aside.

Steam the pumpkin until soft.

Mix the glutinous rice flour and wheat starch, stir in the pumpkin puree, and knead the dough while adding the pumpkin puree without adding a drop of water.

Knead into a dough.

Divide the mixed dough into several portions, wrap the fillings like glutinous rice balls, shape into balls, and flatten slightly.

Put it into a rice cooker lined with a cloth and steam for 7-8 minutes. After steaming, sprinkle some grated coconut on the surface.
