Overview
I insisted on being a vegetarian for 3 days. After eating for 2 days, I suddenly wanted to eat something heavy. I was planning to make okra scrambled eggs, and then had loofah and egg drop soup in the evening, but decided to make Indian food.

Saute mustard seeds and fry onions. You can omit the mustard seeds if you don’t have them.

After rinsing the okra, rub the surface of the okra with coarse salt to wash the fluff, and rinse again.

Add okra, cover and simmer for 5 minutes. Add salt to taste and the tomatoes will release juice. I forgot to add minced ginger and garlic this time. If you like it softer, cook it longer.
