Overview

I made this sesame crispy ball with my own rock sugar sesame powder, without using butter. I think this Chinese-style snack is more pure when made with corn oil. Of course, you can replace it with the same amount of butter, but in addition to the aroma, the taste will be slightly different. This sesame crispy ball is really super crispy and fragrant.   1. Prepare black sesame powder first. Toast the black sesame seeds in the oven.

  2. After cooling, add rock sugar (extra quantity) and beat into powder. Add about 20g sugar to 100g black sesame seeds.

  4. Add 30g of powdered sugar and stir evenly. The amount of sugar added when black sesame is powdered is suitable for eating directly, because this step also requires the addition of low-gluten flour. If the sweetness is not enough, you need to add more powdered sugar.

  6. Use a rubber spatula to cut and mix evenly until there are no dry powder particles.

  7. Divide the dough into small portions of about 10g each, roll them into balls, and place them on a baking sheet lined with greaseproof paper. Heat up and down the middle layer to 170 degrees for 10 minutes.
