Dragon fruit pudding
Overview
Dragon fruit, especially the red-heart pitaya, is rich in anthocyanins and gelatinous plant protein, which is particularly effective in improving immunity and expelling toxins. It also tastes sweeter than the white-heart pitaya. The three-color dragon fruit pudding is mixed with mellow milk, which makes the pudding taste smoother. One red dragon fruit, peeled and diced.

Leave a small amount of diced dragon fruit for decoration, and puree the rest with a food processor.

Soak the gelatine slices in cold water for about 10 minutes until soft.

Pour 1/3 of the melted gelatine liquid into the pitaya puree, and 2/3 into the milk, stir evenly.

Separate 1/3 from the milk and dragon fruit puree and mix together so that all three liquids are ready.

Take a clean cup, pour 1/3 of the liquid into the bottom of the cup, and put it in the refrigerator for 20 minutes.

After it solidifies, pour another layer of liquid of a different color, continue to freeze, and finally pour another color until the cup is full.

Finally, take an appropriate amount of diced dragon fruit and put it on the surface for decoration.
