Rinse the fresh blueberries and drain them. Pinch each blueberry with your hands and put it into a clean glass container. Place one layer of blueberries and one layer of rock sugar in it. Note: There must be more than 1/3 space left in the container!

Put the bottle cap on, but do not tighten it. The bottle cap at this time is only used to prevent dust and insects. Note: Remember not to tighten the bottle cap, because a large amount of other (carbon dioxide) will be produced during the fermentation process of blueberries! Place the wine-making glass bottle in a relatively constant-temperature environment. The optimal temperature is 25~29°C. In the first 24 hours, the blueberries will slowly bubble and ferment under the action of yeast and native microorganisms. Note: At this time, you need to regularly open the bottle cap to vent!

Ferment like this for 5 to 7 days. Note: Starting on the second day of this initial fermentation, the blueberry (grape) fruit will float to the surface. Use a clean wooden spoon to turn the fruit every day and press it into the juice.

Tighten the cap and place it in a cool place to continue aging; the optimal storage temperature is between 10 and 18°C. Currently, I don’t have such conditions at home (except for those with a cellar), so I store it in the refrigerator. Among the two glasses of fruit wine, the one on the left is a grape-blueberry mixed wine, and the one on the right is pure blueberry wine. The pure blueberry wine feels very dry (no sweetness) in the mouth, and the wine has a rich and fruity aroma.
