Homemade pork jerky--Reflections
Overview
This is my first time making pork breasts, and I have run into a lot of pitfalls🤕. I feel that after seeing so many successful and beautiful recipes, everyone would also like to see where other people’s recipes are not perfect (can’t say they are failures🙊)

Chop the pork into minced meat, add seasonings except honey, stir in one direction, and marinate in the refrigerator for 1-2 hours. ps: This step is similar to the recipe on the Internet. I added less salt. I didn’t want it to taste too salty. I also added a few pinches of pepper, salt and cumin casually. Of course, because the amount added was too small, the finished product could hardly taste the addition...

Roll the meat, because I didn’t take a picture, I used the picture above instead. Put the meat on oil paper, wrap the rolling pin with plastic wrap (for easy washing), and roll it out evenly and thinly. Then brush a layer of honey water on the surface. I have to pay attention to: 1. If you have as much pork as me, please bake it in 2 or 3 times. Mine is a 32L oven. With so much meat in the baking pan, I can only roll it out to about 4mm thick. Do you think it is not thick? No no no! The finished product is 3mm thick.... It seems like you are eating thin meatballs? 2. It’s really about applying a layer of honey water. I’m too lazy to wash the brush, so I mixed honey with water 1:1 to make honey water. I dipped it in with my hands and applied it, and I felt like “come on, come on, come on, come on some more🤤” The finished product was too watery and wet. So I think the honey water can be thicker when mixing it, and just apply one layer with a brush!

Put it in the oven and bake it. Preheat in advance, heat up and down at 160 degrees and ventilate, for 10 minutes. ps: Since my meat is a bit thick and has a lot of meat (if you are a novice, you will most likely be similar to mine! Don’t think I am too stupid😈), I think it can be 190-200 degrees for 15 minutes.

After the first baking, take it out, pour off the juice, turn it over, brush it with honey, put it in and continue baking (second baking). 160 degrees for 10 minutes. ps: I think the temperature and time are still not enough, because the meat patties after baking and baking are light in color and wet... Don’t be greedy and apply too much honey water

After baking for the second time, take it out and turn it over, sprinkle with sesame seeds, and brush with honey water or not. It seems that I brushed too much again. This time I felt that the meat was not grilled well enough, so I finally adjusted the temperature from 160 degrees to 190 degrees, and the time changed to 20 minutes. I saw that mine was almost burnt...actually, it was not burnt yet, it was black sesame seeds (I don't have white sesame seeds at home). The last time I was impatient, I increased the temperature to get to this level, so I should bake the first and second bakes at 190 degrees for 15 minutes, and bake the third bake at 160-190 degrees for 5-10 minutes. I had to watch the third bake to avoid burning it, and turn off the oven at any time if it was almost done. I hope you will succeed and don’t make it as wet and thick as mine, which is like snack-like pork breast! 😭
