Rhubarb Rice and Bacon Zongzi
Overview
There were some pineapple leaves left over from the Dragon Boat Festival, and I happened to see rhubarb rice in the supermarket. I hadn’t eaten rhubarb rice rice dumplings for many years, so I bought some and used the bacon I just bought to wrap the rice dumplings. The taste was also good.

The rhubarb rice is soaked in water two hours in advance, and the soaked jujubes are not used.

Cut bacon into large pieces

Prepare all the ingredients, soak the pineapple leaves in water in advance (already cooked before)

Use pineapple leaves to cut out the required size, put an appropriate amount of rhubarb rice, a piece of bacon, and a little more rhubarb rice on top

First fold it in half left and right, then fold it up and down,

Tie up with cotton thread and the rice dumplings are wrapped; wrap them all in turn

Pour hot water into the pressure cooker and put in the rice dumplings. The water should cover the rice dumplings

After bringing the steam to a boil over high heat, turn to medium to low heat and simmer for 40 minutes

Turn off the heat and wait until the rice dumplings are completely deflated, then open the lid and take out the rice dumplings. They are good to eat hot or cold, but don’t eat too much at one time
