Canned dried eggplant
Overview
We usually eat eggplants all the time, but now we have a different taste, dry them and make them into cans, which give it a unique flavor as a meal.

Chop the peppers.

Chop the garlic (you can chop it slightly larger than mine)

Shred ginger.

Stir the chili garlic and ginger together with salt.

Two pounds of dried eggplants are soaked in a bottle of soy sauce for two days.

Put the dried eggplant soaked in light soy sauce into the pot together with the three ingredients and stir-fry until cooked (remember not to add water)

After frying, cool and can.
