Raspberry Jam
Overview
I saw an old man selling raspberries in a basket at the morning market. I bought some and ate them. They were really not very tasty, so I made them into jam.

Soak raspberries in water and 1 tablespoon of baking soda for 10 minutes.

Pour the soaked raspberries through cold water again, drain the water and put it in a pot, sprinkle rock sugar on top, cover the raspberries, and start heating over medium heat.

The raspberries have a lot of juice, so cover them with a lid and continue to heat them.

When the water is reduced by 1/2, use a spoon to skim off the foam, open the lid and continue to simmer until the soup dries up.

Pour into a heat-resistant container and let cool naturally.
