Steps
-
Wash the lard and cut into small cubes.
-
It is best to cut it into small pieces so that the oil will come out easily.
-
Put the lard into a clean pot, add a small bowl of water, and start boiling over medium heat.
-
Use a spatula to turn the pot several times and the water in the pot will continue to evaporate.
-
When the water in the pot has evaporated and the oil gradually begins to come out, add a small spoonful of salt and simmer over low heat (be sure to use low heat).
-
Be sure to stir frequently. When the volume of the oil residue becomes very small and becomes golden brown and floats on the oil, turn off the heat.
-
The cooked oil is clear and bright.
-
Filter out the oil residue in the pot. Let the oil settle for a while.
-
Pour the oil into a container, seal it and store it in the refrigerator.
-
Add a small bowl of water to the pot to make the lard whiter and more beautiful. Add a small spoonful of salt to prevent oil from splashing out and scalding people during the cooking process.
