Stir-fried mustard greens
Overview
Mustard greens are especially delicious if fried well. Let’s take a look at how I fry mustard greens. First process the mustard greens, blanch them in boiling water with a little salt, and take them out after changing color, which can help remove the astringent taste; then cut the blanched mustard greens, making sure that the stems and leaves are cut separately; the last step is to stir-fry over high heat, first sauté the red pepper and garlic, then add the less-ripe stems and stir-fry, then add the easily-ripe leaves, stir-fry a few times to season, and serve. In just a few minutes, this simple, nutritious and delicious vegetarian stir-fry is ready. It tastes really good,
