When pickling, it is best to choose purple-skinned garlic. Compared with white-skinned garlic, purple-skinned garlic has a stronger flavor. The first step: first rinse the soil outside the garlic skin several times, and then peel off the outermost layer of old and dirty skin. Then cut off the garlic stems that are too long. Soak completely in tap water for 5 to 7 days, changing the water once a day. If the hot water becomes cloudy during the weather, change it twice more. This method can slightly remove the spiciness of the garlic.

Second step: Soak the garlic in cooled salted water for another 1-2 days to let the garlic taste better. Of course, some omit the step of soaking for 5-7 days, so that the skin of the pickled garlic is dry and the meat is spicy. They think it will absorb nutrients. In fact, capsaicin is afraid of heat and decomposes quickly when exposed to heat, reducing its bactericidal effect. Therefore, brewing it in cold water does not affect its composition.

The third course: heat the pan to make the sauce. Add or subtract the ratio of sugar to vinegar according to your taste. (This is very important, it determines the taste of your sweet and sour garlic) Put the garlic into a pickling container whole or in pieces. (Friendly tip: don’t use plastic or metal) Pour in the cooled sweet and sour sauce and submerge. Finally, put it in a dark place. Garlic will turn green when exposed to light. Although it does not affect the taste, the visual quality is not good after all. (If the sauce is not enough, you can add vinegar and sugar appropriately in the pickling.) The soaking time is more than 1 month, and you can taste and adjust in the middle. If you want it crispier, put it in the refrigerator.
