Shepherd's purse minced meat and tofu soup
Overview
This soup is loved by everyone in my family, especially my daughter. The tofu is soft and tender, the shepherd's purse is fragrant, the minced meat is fresh, and the thickened soup is smooth and mellow.

Remove the old leaves from shepherd's purse and wash away the sediment.

Cut into sections of about 1cm.

Cut the fat tofu every 0.5 cm, all the way across.

Put the minced meat in a bowl, add cooking wine and a little salt, stir evenly.

Add a little water to the starch to make water starch.

Add water, 3 drops of oil and remaining salt to the pot, cover and bring to a boil.

After the water boils, pour in the minced meat and break it up with chopsticks.

Bring to a boil again and skim off any foam with a spoon.
